There are some recipes that get passed around because they’re fancy, and there are some recipes that stick around because they simply work.
These pancakes fall into the second category.
As a family with five kids, Saturday and Sunday mornings can get a little chaotic around our house. Someone is looking for socks, someone is asking what’s for breakfast before they’ve even gotten out of bed, and even before coffee, I can make this recipe in a zombie-state.
This recipe has become one of our favorites because it’s simple, uses ingredients we almost always have on hand, and makes thick, fluffy pancakes that disappear as fast as I can get them off the griddle.
We usually serve them with butter, maple syrup, fresh berries when they’re in season, or mini chocolate chips if the occasion calls for it. They’re not fancy, but they’re the kind of breakfast that brings everyone to the table.
Pancakes (Makes about 9)
Ingredients:
* 3 cups all-purpose flour
* 7 teaspoons baking powder
* 2 tablespoon white sugar
* 1/2 teaspoon salt, or more to taste
* 2 1/2 cups milk
* 6 tablespoons butter, melted
* 2 eggs
Directions
1. Sift flour, baking powder, sugar, and salt together in a large bowl.
2. Make a well in the center and add milk, melted butter, and egg; mix until smooth.
3. Pour on griddle and cook until bubbles start to appear and flip.
4. Serve and enjoy.
